The Pickled Sauce: oil and vinegar, the main ingredients

The Pickled Sauce is a conservation method, the tradition started many ages ago. The oil and also the vinegar are the main ingredients. 

Documents from Mutriku`s town archive confirm that in 1619 and 1620 mule drivers from Chillarón del Rey (Guadalajara), situated on more than 400 kilometers from Mutriku, they supplied olive oil in these port, and in 1622, Bartolomé Garcia, resident of these town, bought 50.000 pounds of Tuna in exchange for olive oil.

Following the tradition, Lorea produce White Tuna in Pickled Sauce, characterized for its delicated flavour and especial and delicate texture.
