4 things that you did not know about Cantabrian Anchovies

The anchovy is a blue fish of the family Engraulidae. There are many species and they are found in many areas of the world, like “Engraulis ringens” on the coasts of Peru and Chile. Cantabrian anchovy belongs to “Engraulis encrasicolus” specie; it has the highest quality and is the most appreciated at the canning industry.

Anchovy fishing season in the Biscay Bay starts in  spring when the anchovy rises to the surface to reproduce and finishes in autumn when it returns into the depths of the sea.
